Try the delicious mini quiches with kale powder. A real hit at every party!
Ingredients (12 servings)
For the dough:
- 220 g spelt flour (type 630)
- 120 g cold butter
- 2-3 tablespoons water
- 1 pinch of salt
For the filling:
- 1 spring onion
- 1 red and 1 yellow pepper
- 100 g mushrooms
- 2 tbsp cooking oil
- 1 tsp kale powder
- 200 ml cream
- 2 eggs
- 1 pinch of salt
- 1 pinch ground nutmeg
- Pepper to taste
preparation
For the dough, knead all the ingredients on the work surface until smooth. Then place the dough in the fridge for about 30 minutes.
While the dough is in the fridge, you can chop the vegetables. Heat the oil in a pan and sauté the salmon for a few minutes. Add the other vegetables and season with salt and pepper. Mix the cream, eggs and kale powder in a separate bowl and season with nutmeg.
After cooling, roll out the dough with a rolling pin and cut out 12 small circles with a knife. Then press the dough circles into the wells of the greased muffin tins. Prick the base a few times with a fork.
Distribute the vegetables into the molds with a spoon and pour the cream sauce over them.
Bake in the oven at approx. 160-180 ° C for 25 minutes (it is best to preheat the oven for a few minutes).
Tip: If it is kale season, simply replace the vegetable with about 200 g of kale.
