Kale Lime Muffin

Grünkohl-Limetten-Muffin

Kale only works in winter? We don't think so! Try kale powder in muffins. We think it's delicious.

Ingredients (12 servings)

  • 2 organic limes (for about 50 ml lime juice)
  • 250 g flour
  • A pinch of salt
  • 2 teaspoons of baking soda
  • ½ tsp baking soda
  • 2 tsp kale powder
  • 50 g chopped almonds (pistachios taste good too and give the muffin more colour)
  • 1 pack vanilla sugar
  • 120 g sugar
  • 1 egg (M)
  • 80 ml oil
  • 200 g natural yoghurt

preparation

Squeeze the juice out of the limes so that about 50 ml is collected. Beat the vanilla sugar, sugar and egg in a separate bowl with a hand mixer until frothy. Stir in the oil, the juice of the limes and yoghurt. Mix the flour, salt, baking powder, baking soda, kale powder and almonds in a bowl and fold into the lime mixture with a spatula. Divide the mixture between the moulds and bake in a preheated oven at 180 °C for about 20 minutes until light brown.

The muffin is a great snack on the go!
